This module is intended to acquaint students with food control, placing orders, scheduling food and beverage delivery procedures, checking the delivered contents for quality and quantity.
Students will study the importance of logistics of food service management and the tools that are needed to be applied to real operational scenarios. The module stresses the competitiveness within this sector. Students will relate to how to manage food service and logistics in different types of premises, plants, venues, and different restaurant operations.
The module focuses on the basic principles of choosing the ideal operations and staff management which will reflect the food being served. It will also outline ethical considerations to be considered in this business sector for opening food operation outlets in line with European legislation.
